Roasted Garlic Potatoes with
Red Peppers and Onion

  • Scrub your potatoes, pat dry, then cut into cubes. Lay them out on a cookie sheet, covered in aluminum foil.

  • Cut the red pepper and onion into pieces, slightly bigger than bite-size. Add them to the potatoes on the cookie sheet.

  • Toss the vegetable mixture with olive oil, coating well. Add chopped garlic, salt, pepper, and garlic powder to taste.
Adrienne's Tip: If in a hurry, add Hidden Valley Ranch Dip Mix instead of ingredients above, adds great flavor too!

  • Bake in a preheated 425 degree oven, until potatoes are golden brown, about 45 minutes. Turn them over about halfway through, to ensure even cooking.
